Watermelon Cucumber Salad Recipe

Try this quick easy recipe this summer! Watermelon cucumber salad is perfectly balanced making it the ideal summer meal. This salad is vegan and gluten free! It can be served for guests at your next summer holiday gathering as a side dish, appetizer or even dessert!

Ingredients:

  • 2 cups of diced cucumbers

  • 1 ½ cup of strawberries, sliced into rounds.

  • 2 cups of cubed watermelon

  • ½ cup of crumbled vegan feta

  • 3-4 leaves of fresh mint

  • 1 lime

Dressing:

  • 1 ½ tablespoon of agave nectar

  • 1 tablespoon freshly squeezed lime juice.

  • 1 teaspoon lime zest

  • ½ tablespoon of finely chopped mint

  • A pinch of sea salt

Instructions:

  1. Wash and dry the watermelon, then slice in half widthwise.

  2. Set watermelon of a cutting board flat side down.

  3. Slice the entire watermelon into strips about 1” wide.

  4. Rotate and slice the other way so that you can create 1” cubes.

  5. Remove each piece of watermelon and slice into cubes. Discard the rinds.

  6. In a small mixing bowl, whisk together all ingredients for dressing including: 1 ½ tablespoon of agave, 1 tablespoon of lime juice, 1 teaspoon of lime zest, ½ tablespoon mint and a pinch of sea salt.

  7. Add diced cucumber, slice strawberries and cubed watermelon to a large mixing bowl.

  8. Pour dressing all over fruit and toss gently to coat.

  9. Top with feta and mint just before serving.
