Shrimp Orzo with Feta

Ingredients: 

  • 1-1/4 cups uncooked whole wheat orzo pasta

  • 2 tablespoons olive oil

  • 2 garlic cloves

  • 2 medium tomatoes

  • 2 tablespoons lemon juice

  • 1-1/4 pounds uncooked shrimp

  • 2 tablespoons fresh cilantro

  • 1/4 teaspoon pepper

  • 1/2 cup crumbled feta cheese

Directions:

  1. Cook orzo based on instructions provided on box

  2. In a large skillet, warm oil over medium heat 

  3. Add garlic to the skillet; stir continuously for 1 minute. 

  4. Add tomatoes and lemon juice, continue to stir. 

  5. Add shrimp to the skillet

  6.  Lower heat; allow the mixture to simmer until shrimp is completely cooked.

  7. Drain orzo. 

  8. Add orzo, cilantro and pepper to shrimp mixture.

  9. Sprinkle with feta cheese.

  10. Chill for 30 minutes and serve.
