Creamy Kale Pesto (vegan and oil-free)! (Copy)

This kale pesto is delicious, packed with nutrients, and contains no dairy or oil, making it a great healthy alternative to traditional pesto! It can be used as a dip or spread or as a topping for pastas and pizzas. I hope you enjoy it as much as I do!

Ingredients:

  • 1.5 cups fresh kale

  • 1 cup fresh basil

  • ¼ cup raw cashews

  • ¼ cup raw pine nuts

  • 1 tablespoon lemon juice

  • 3 cloves garlic

  • 2 tablespoons nutritional yeast

  • 4 tablespoons unsweetened plant milk

  • Salt and pepper to taste

Instructions:

  1. Add ingredients through plant milk to a blender or food processor

  2. Blend, adding plant milk 1 tablespoon at a time, until smooth

  3. Add salt and pepper to taste and blend to incorporate

  4. Store in the refrigerator or freeze for longer shelf life
